Apple Baklava (gluten free)


This baklava is generous layers of apple slices with a delicious mixture of chopped nuts. Enjoy a healthy version of this international dessert.

  • Sweet Syrup
  • 1 cup agave syrup
  • 1/2 cup golden raisin
  • 6 dates
  • 2 Tbs. lemon juice
  • 2 tsp. cinnamon
  • 1/4 tsp. ground clove
  • 1/8 tsp. ground cardamom
  • Fruit and Nut layers
  • 8 apples, peeled, and thinly sliced on mandoline
  • 2 cups toasted walnuts, chopped
  • 2 cups toasted pecans, chopped
  • 1/2 cup currants

Step 1

Preheat oven to 350F.

Sweet Syrup
Place all the ingredients in a blender and blend to form a smooth paste.

Place the chopped nuts into a large bowl.

Separate the sliced apples into four equal parts. Evenly place one portion in a square springform pan and press gently. Brush one quarter of the syrup over the top of the apples and sprinkle one quarter of the nuts and one third of the currants evenly over the top, gently pressing each layer into place.

Repeat until all the apples, the syrup, the nuts and the currants are utilized. Bake in the oven for about 30 minutes.
