Glazed Blueberry Muffins

  • 2 egg whites
  • 1/2 c sugar
  • 1 tsp vanilla
  • 2 c reduced fat baking mix
  • 1/3 c cranberry juice
  • 1/2 c all bran cereal
  • 2/3 c. buttermilk
  • 1 pkg (1#) frozen blueberries
  • 1 tsp grated lemon zest
  • 2 T lemon juice
  • 1 c confectioners sugar (10X)

Step 1

Preheat oven to 400F. Line 12 cup muffin pan with liners. At medium high speed, beat egg whites, sugar and vanilla until thickened, 4-5 minutes.

Add baking mix, cranberry juice and cereal; beat until combined. Add buttermilk; beat until smooth. Fold in blueberries and zest. Divide batter among cups. Bake 20 minutes or until pick inserted into centers comes out clean. Cool 10 minutes. Remove; cool. Stir lemon juice into confectioners sugar until smooth. Drizzle over muffins.
