Cheesy Potato Skillet with Mixed Veggies

Ingredients

  • 1 T oil
  • 16 ounces frozen mixed veggies (corn, peas, carrots, green beans, lima beans)
  • 4 c frozen potatoes obrien (hashbrowns with onions and peppers)
  • 1/2 c red-fat shredded cheddar or mozzarella cheese
  • 10 grinds fresh black pepper
  • 2 T parmesan cheese

Preparation

Step 1

Heat oil and veggies on medium-high in a skillet for 4 minutes, stir often.
Add potatoes and cook 6 minutes, stirring often.
Top with cheese, turn off heat and let melt.

*Serve with cottage cheese and fresh fruit.
