Ingredients
- 2 cups sugar (or 1 cup)
- dash of salt
- 6 cups half & half (some whipping cream?)
- 3/4 tsp almond extract
- 2 eggs
- 2 T cornstarch
- 2 tsp vanilla
- 3 cups sweetened mashed peaches (1/2 cups sugar)
- 2 T lemon juice
- 1/2 to 3/4 cup whole milk
Preparation
Step 1
Thoroughly combine sugar, cornstarch, salt, and eggs. Stir in half & half and cook over medium low heat until mixture thickens slightly. Remove from heat and refrigerate. When cool, add vanilla and almond extracts.
Add 1/2 cup sugar to 3 cups mashed peaches. Mix in lemon juice and refrigerate at least one hour. When ready to freeze the ice cream, add peaches to ice cream mixture and pour into the freezing can. Add enough whole milk to bring the level to 3/4 full. Freeze.
