Roasted Veggie Fries

Ingredients

  • 1 small celeriac or rutabaga, peeled
  • 1 lb each sweet potatoes, carrots and parsnips, unpeeled
  • 3 tbsp olive oil
  • 2 tsp onion powder
  • 1 tsp each paprika and dried thyme leaves
  • 1/4 tsp each salt and pepper

Preparation

Step 1

Preheat oven to 425 F. Cut all vegetables into matchstick-shaped pieces about 1/2 inch diameter. Place a large baking sheet in oven to preheat for 5 minutes.

Meanwhile, blend oil with onion powder, paprika, thyme, salt and pepper in a large bowl; add vegetables and toss to coat. Scatter vegetables in a single layer over baking sheet. Roast, turning occasionally and rotating sheet if needed, for 30 minutes or until tender.
