Ingredients
- 6 medium baking potatoes
- 2 1/2 cup grated sharp cheddar cheese
- 1/4 cup butter
- 1 cup sour cream, room temperature
- 1/3 cup minced onion
- Salt and pepper
- Paprika
Preparation
Step 1
1. Boil potatoes until tender. Drain. Cool slightly. Peel, shred into a bowl.
2. Preheat oven to 350F. Butter 8" square baking dish. Cook 2 cups cheese and butter in heavy pan over low heat until almost melted. Stir constantly, about 1 min. Remove from heat. Stir in sour cream and onion. Season with salt and pepper.
3. Fold into potatoes. Pour into prepared dish. Top with remaining 1/2 cup cheese, sprinkle with paprika. Bake until bubbly, about 30 mins.
