Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup unspiced pumpkin
- 1 teaspoon lemon juice
- 3/4 cup flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- Chopped nuts (optional)
Preparation
Step 1
1 Beat eggs at high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Set aside. In a separate bowel, stir together flour, baking powder,cinnamon,ginger, salt, and nutmeg. Fold in pumpkin mixture. Line jellyroll, pan or 1-inch deep cookie sheet with waxed paper ( or grease and flour it )Spread mixture in this pan, and sprinkle with nuts, if desired. Bake at 375 for 15 minutes. Turn out onto towel sprinkled with powdered sugar: roll up and let cool.
Filling:
1 cup powdered sugar
4 tablespoons butter
1 (8 ounce) packaged cream cheese
1/2 teaspoon vanilla
Beat ingredients until smooth. Unroll cake, spread filling, and roll back up. Chill.
