Stella May's Yummy Chocolate Cake with Fudgey Chocolate Icing

If you crave something chocolate, then this is the cake for you. It is almost like eating a chocolate bar.

Ingredients

  • For Cake:
  • 1/2 cup (1 stick) butter, melted
  • 1 cup sugar
  • 4 large eggs
  • 1 (16 oz) can chocolate syrup
  • 1 cup self-rising flour
  • 2 tsps vanilla extract
  • Fudgey Chocolate Icing (recipe follows)
  • Fudgey Chocolate Icing:
  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 1/2 cup (1 stick) butter
  • 1 (12 oz) package semisweet chocolate morsels
  • 1 cup chopped pecans
  • 2 tsps vanilla extract

Preparation

Step 1

For cake: Preheat oven to 325 degrees. Grease and flour a 13x9x2-inch baking pan.
In a large bowl, combine butter, sugar, and eggs, mixing well. Stir in chocolate syrup, flour and vanilla. Pour into prepared baking pan. Bake 38 to 40 minutes, or until a tester inserted in center comes out clean. Pour icing over hot cake.

For icing: In a medium saucepan, combine sugar, evaporated milk, butter, and chocolate morsels. Bring to a boil over medium-high heat, stirring constantly. Boil 2 minutes, stirring constantly. Add pecans, boil 3 minutes, stirring constantly. Remove from heat, and stir in vanilla. Pour over hot cake.
