Mama J's Cheesecake

Ingredients

  • Crust:
  • 2 1/2 cups graham cracker crumbs
  • 3 T sugar
  • 1 1/2 sticks melted butter
  • Filling:
  • 1 3 oz. pkg lemon jello
  • 1 cup hot water
  • 3 T lemon juice
  • 1 8 oz. cream cheese
  • 1 cup sugar
  • 1 tsp. vanilla
  • 1 lg. can evaporated milk, chilled

Preparation

Step 1

Crust:
Mix all crust ingredients together and put in 9x13 pan. Pat down.

Filling:
Mix lemon jello and hot water. Add lemon juice. Let cool but not set.

Beat cream cheese, sugar and vanilla. Add to jello mixture. Beat until smooth.

Whip large can of chilled evaporated milk. Fold into jello mixture. Pour into crust and refrigerate.
