Ingredients

  • Cake:
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 2 cups sugar
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup coconut
  • 1 cup chopped walnuts (optional)
  • 1/2 cup toasted wheat germ
  • 1 tsp vanilla
  • Frosting:
  • 4 ounces cream cheese, room temp
  • 1/2 lb powdered sugar
  • 1 tsp vanilla
  • 4 tbs butter

Preparation

Step 1

1. Preheat oven to 350. Sift together flour, baking soda, and cinnamon and set a side.
2. Beat sugar, oil, and eggs with mixer until well blended. Gradually add flour mixture. Fold in carrots, pineapple, coconut, walnuts, wheat germ, and vanilla. Pour batter into greased and floured bundt pan.
3. Bake 45 minutes to an hour, testing after 45 minutes. Cool completely.

For frosting combine all ingredients and beat well.

Frost cool cake.
