Smokey, Tangy Sweet, and Thick.
- 1/2 large Onion, finely minced
- 1 pinch salt
- 2 Tbsp. Olive Oil
- 3/4 cup Brown Sugar
- 32 oz. quality Tomato Ketchup
- 1/3 cup Apple Cider Vinegar
- 2 Tbsp. Ground Ginger
- 1 Tbsp Onion Powder
- 2 Tbsp Garlic Powder
- 1/4 cup Molasses
- 1 1/2 Tbsp Dijon Mustard (or 2 tsp. Dry)
- 2 tsp. Worchestershire Sauce
- 4 Tbsp Liquid Smoke

Heat olive oil in a non-reactive sauté pan, add minced onion and salt, and sauté until translucent.
Add a bit of the brown sugar and continue sautéing until onion starts to caramelize, about 15 minutes.
Take off heat and let cool until no longer sizzling (to prevent spatters and painful burns). Add the rest of the ingredients, and place back on low heat, stir and simmer until well thickened.
Adjust seasoning to taste
