Tender Sugar Cookies

Ingredients

  • 1 c. butter, softened
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg
  • 1 tsp. vanilla
  • 2 1/4 c. all-purpose flour
  • 1/4 c. sugar

Preparation

Step 1

In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup sugar, the baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. If necessary, cover and chill dough for 30 to 60 minutes or until easy to handle.

Preheat oven to 300 degrees. Place the 1/4 c. sugar in a bowl. Shape dough into 1" balls. Roll balls in the sugar to coat. Place balls 2" apart on an ungreased cookie sheet. Bake about 15 minutes or until tops are slightly crackled and sides are set (do not let edges brown). Transfer cookies to a wire rack and let cool.

To make ahead and store: Layer cookies between sheets of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.
