Chicken n Sausage Fricassee

Ingredients

  • 1/3 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 6 strips bacon,cut into small pieces
  • 1 lb. smoked sausage, medium slice
  • 8 boneless chicken thighs cut in half
  • 2 cups mushrooms diced
  • 1-1/2 cups chopped onion
  • 1/2 cup chopped celery
  • 3/4 cup chopped bell pepper
  • 1 can Rotel tomatoes, drained
  • 4 tbsp. chicken base
  • 1 cup water
  • 2 tbsp.kitchen bouquet
  • 1 tbsp. worcestershire sauce
  • 1 tsp. dried basil
  • 1/4 cup parsley,minced
  • cooked rice

Preparation

Step 1

Make a roux combining the oil and flour in a heavy skillet over low heat whisking a lot.
Once its smooth, simmer slowly, stirring constantly until the flour and oil is dark brown, do not overcook or burn.
In another skillet,fry the bacon pieces, the smoked sausage, and the chicken until the bacon is crispy, sausage is toasting and the chicken is no longer transparent.
Then drop in the mushroom pieces and toss with the sausage, chicken, and bacon until they are melded in the mix.
Then add the onions, celery, bell pepper and the Rotel, blend thoroughly into the roux, cooking until the veggies turn limp.
Complete this and then spinkle in the chicken base,Kitchen Bouquet and the worcestershire sauce, fold in the parsley.Let cook about 20 -30 minutes, serve over hot rice.
