Christmas Wreath Salad

  • 1 6 OZ STRAWBERRY JELLO
  • 1 C BOILING WATER
  • 1 20 OZ CAN CRISHED PINEAPPLE, DRAINED, RESERVING JUICE
  • 1 CUP PLAIN YOGURT
  • 1 CUP CHOPPED PECANS
  • 1/2 C MARASCHINO CHERRIES, HALVED
  • LETTUCE LEAVES AND ADDITIONAL CHERRIES

Preparation

Step 1

IN A BOWL, DISSOLVE JELLO IN BOILING WATER. REFRIGERATE UNTIL PARTIALLY SET, ABOUT 30 MINUTES. IN DRAINED PINEAPPLE JUICE ADD ENOUGH WATER TO MEASURE 1 3/4 CUPS , STIE IN JELLO. WHISK IN YOGURT UNTIL SMOOTH. FOLD IN NUTS, CHERRIES AND PINEAPPLE.
POUR INTO 2 QUART RING MOLD THAT HAS BEEN SPRAYED WITH COOKING SPRAY. REFRIGERATE UNTIL SET. UNMOLD ONTO LETTUCE LINES PLATE AND GARNISH WITH ADDITIONAL CHERRIES.
