Ingredients
- 1 pkg. frozen asparagus spears (10 oz)--OR FRESH
- 1 pound flounder/sole fillets
- 1 Tablespoon butter
- 1/2 cup milk
- 2 Tablespoons dry white wine
- 1 Tablespoon flour
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/2 cup (2 oz) shredded Cheddar cheese
Preparation
Step 1
1. Unwrap frozen asparagus. Heat asparagus in package in microwave on medium-low (30% power) 2 minutes, or until easily separated. Or, you can use fresh and steam to crisp-tender.
2. On a narrow end of each fish fillet, place 1/4 of the asparagus spears; roll up. Place in a shallow 2 1/2 quart casserole; dot with butter. Cook, covered, in microwave on High for 4-6 minutes, rearranging fillets once. Remove fillets to platter; keep warm.
3. Into liquid in casserole, whisk milk, wine, flour, salt and pepper. Cook on high 3-4 minutes until slightly thickened, stirring twice.
4. Stir in cheese. Cook on high for 1 minute; stir until smooth. Pour over fillets. If you like, garnish with cooked shrimp.
