Ingredients
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1 egg
- 1 T milk
- 2 cups rhubarb, peeled, finely diced
- 1 package (3 oz) of strawberry Jello (not sugar-free)
- 1 cup white sugar
- 1/2 cup flour
- 1/2 tsp cinnamon
- 1/4 cup butter, softened
Preparation
Step 1
Mix flour with baking powder and salt in small bowl. Cut in the softened butter until the mixture is crumbly. Whip up the egg in the glass with the milk. Add the mixture to your bowl and stir until incorporated.
Coat 9x9 pan with spray. Spread the mixture in the bottom of the pan and press down slightly. Sprinkle the diced rhubarb over the top and sprinkle the jello powder over that.
Put the sugar, flour, and cinnamon in bowl. Mix together and cut in 1/4 cup softened butter until crumbly. Scatter the crumb mixture over the top of the pan. Bake at 350 for 45 minutes, or until the rhubarb is cooked through and the topping is brown. Cool in pan on wire rack. When the bars are thoroughly cool, cut . Serve warm, at room temp or chilled.
