Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 tsp vanilla
- 1 egg, beaten
- 1/2 tsp baking soda
- 2 1/4 cup all purpose flour
- 2 cups sweetened flaked coconut
- Garnish: additional sugar
Preparation
Step 1
Mix together all ingredients except garnish; form into walnut size balls. Place on well greased baking sheets. Flatten each ball with the bottom of a glass dipped in sugar. Bake at 350 degrees for 7 minutes or until edges are light golden.
