Asian Chicken and Rice

Ingredients

  • 4 chicken thighs
  • 1 onion, minced
  • 1 Tablespoon minced garlic
  • 1 Tablespoon minced ginger
  • 1 teaspoon cumin
  • 2 Tablespoons oil
  • 1 1/2 cups Arborio rice
  • 3 1/2 cups chicken broth

Preparation

Step 1

Brown chicken in a large straight-sided skillet. Remove. Saute onion, garlic, ginger, and cumin in oil. Stir in rice and broth. Bring to a boil and return chicken to skillet. Bake at 375F until chicken is cooked through and liquid is absorbed, about 25 minutes.
