Black Bean Cous Cous Salad

This is a great salad because you can throw it together with any amount and combination of the ingredients you have on hand. The dressing makes it, so just add it slowly so as not to add to much.

Ingredients
- Honey Vinagrette Dressing:
- 1 Can Black Beans
- 1/4 Cup uncooked Cous Cous, prepared according to package instructions
- 1 Cup Frozen Corn, thawed
- 1/2 Red Bell Pepper, diced
- 1/2 Small Onion, diced
- 1 Small Tomato, diced
- Diced Jalepeno to taste (if available)
- 1/3 c. red wine vinegar
- 1/4 c. honey
- 1/4 c. olive oil
- 2 tbsp. lemon or lime juice
- 1 1/4 tbsp. mustard
- Salt & pepper to taste

Step 1
Cook 1/4 cup dry cous cous according to package directions. Mix cooked, cooled cous cous in a bowl with black beans, corn, bell pepper, onion, tomato and jalepeno.
Mix dressing ingredients separately and add to the salad, mix well and chill. Stir well before serving.
