Ingredients

  • 1 1/3 cups sauerkraut, squeezed of excess moisture
  • 1/4 cup reduced-fat Thousand Island dressing
  • 8 slices marble rye bread
  • 8 slices low-fat 2% milk Swiss cheese
  • 1 pound of left-over Thanksgiving turkey, sliced
  • Calorie-free butter-flavored spray Non-stick spray

Preparation

Step 1

1. Place a large griddle pan over medium-high heat. Spray with non-stick spray.
2. Coat the outsides of marble rye bread with calorie-free butter spray
3. Coat the other side of the marble rye bread with low fat Thousand Island dressing.
4. Layer with Swiss cheese, sauerkraut, turkey, Swiss cheese, and a second slice of bread.
5. Place sandwiches on preheated griddle and cook until cheese is melted and bread is golden brown, 4 to 5 minutes on each side.
