Ingredients

  • 1 lb pinto beans
  • 1 lb zesty ground sausage
  • 4 oz velveta cheese
  • 1 Tbl Garlic salt
  • 3 Tbl Cumin
  • 1-2 Tbl crushed red peppers
  • 1 Tbl taco seasoning
  • 2 Tbl chili powder ( various heat levels )
  • 1 tsp ground oregano

Preparation

Step 1

cover beans with water 2 in above beans in a 4 qt pot and let soak overnight. Rinse beans and place back in pot with water 2 in above the beans. Cover and bring to a boil then turn heat down and simmer beans for 45 min. Let cool then rinse and add water to 2 in above beans ( again )

cook sausage over med heat but do not brown. Drain and keep the grease for later use. Finely chop the cooked sausage ( pulse on food processor works good ).

Add the spices and grease to the beans cover and bring them back to a simmer for 1 1/2 - 2 hrs stirring occassionally. Add sausage and continue to simmer until beans appear to be thick and soupy.

take off heat and let cool for 30 min. Mash the beans while still warm with a potato masher or with a hand blender. Blend in cheese while still warm. Add water if necessary to produce desired consistency.
Beans can be frozen for 4-6 months
