Roasted Red Pepper Hummus

Ingredients
- 2 lg. sweet onions- thinly sliced
- 1/4 c. olive oil, plus 1/3 cup divided
- 1 can 15oz. chick peas or black beans , kidney beans, pinto beans
- rinse and drained beans
- 1/4 cup plus 2 Tablesppons lemon juice
- 1/4 cup tahini
- 2-4 cloves garlic (I use 2 cloves)
- salt and pepper to taste
- roasted red peppers in jar to taste

Preparation
Step 1
Saute onions in 1/4 c. olive oil until golden brown. transfer to food processor, add beans, lemon juice, garlic, tahini, the 1/3 c. oil and salt and pepper. Process until smooth and creamy. add red peppers a little at a time to taste and process
