Sweet Potatoes

Ingredients

  • Topping:
  • 4 c. cooked and mashed sweet potatoes
  • 1/2 c. margarine, melted
  • 1 c. evaporated milk (skin milk works)
  • 1 1/2 c. brown sugar
  • 2 eggs (4 egg whites)
  • 3/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 6 tbsp. margarine
  • 1/2 c. brown sugar
  • 1 c. chopped nuts (pecans)
  • 1 tbsp. flour or crushed com flakes

Preparation

Step 1

Beat sweet potatoes with margarine. Add milk, sugar, eggs, cinnamon, nutmeg, and vanilla. Bake at 425 degrees in a 9 x 13 dish for 15 minutes. Remove and add topping. Topping: Melt margarine and brown sugar. Mix, with flour or corn flakes with nuts. Spread over potatoes and bake an additional 14 minutes at 400 degrees.
