Vietnamese Tilapia with Turmeric and Dill

By

Vietnamese Tilapia with Turmeric and Dill can be made for 6 or for 2. This is one of my favorite fish recipes. I serve it over rice made in the rice cooker.

Preparation

Step 1

In a small bowl, combine the sugar and lime juice and stir until all the sugar
has dissolved. Add the fish sauce and the jalapeno. Set aside.
Trim the scallions and cut them into 2 inch long pieces. Quarter the white and light green pieces lengthwise; leave the dark green pieces whole. Cut the dill into 2 inch long pieces.
Preheat broiler; pat the fish dry with a paper towel. Sprinkle with the ginger, turmeric, and salt and pepper to taste. Arrange the fish in a single layer on a lightly greased broiler pan, spray fish with a light coating of oil spray. Broil, about 4-6 inches below the heat source until the fish is cooked through, about 6 – 8 minutes. There’s no need to turn it over.
Meanwhile, heat a large skillet with the canola oil over medium-high heat and add the scallions to the pan and cook, stirring frequently, until they just start to wilt, about 45 seconds. Add the dill and continue to cook until it has wilted slightly, about 15 seconds more. Pile the scallions and the dill over the tilapia, and serve the sauce on the side.
