Ingredients
- 1 cup peeled and grated sweet potato (about 1 medium or 1/2 pound)
- 1 cup peeled and grated carrot (about 3 carrots)
- 1 cup peeled, cored, and grated apple (about 1 large apple)
- 1/2 cup sugar
- 1/2 cup raisins
- 1/2 cup cracker crumbs or matzo meal
- 1/2 cup chopped prunes
- 2 tablespoons lemon juice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter or margarine, melted
Preparation
Step 1
Preheat oven to 350 degree F. Coat an 8" x 4" loaf pan with cooking spray.
In a large bowl, combine all ingredients; mix well then pour into prepared pan.
Bake 45 minutes, or until heated through. Serve warm as a side dish.
Notes:
A food processor makes grating a snap. Also, your loaf pan doesn't have to be exactly this size; any one close to that size will do.
