LEMON PILAF

Ingredients

  • 1 1 1 C. celery, sliced
  • 1 1 1 C. green onions, chopped with tops
  • 2 2 2 Tbsp. butter
  • 3 3 3 C. rice, cooked
  • 1 1 1 Tbsp. lemon rind, grated
  • 1 1 1 tsp. salt
  • 1/4 1/4 1/4 tsp. pepper

Preparation

Step 1

Saute celery and onions in butter until tender. Add rice, lemon and seasonings; toss lightly. Continue cooking over low heat about 2 minutes or until thoroughly heated stirring occasionally. Serve with broiled chicken or fish.
