Old Fashioned Meatloaf

Ingredients

  • Loaf
  • 2 1/2 pounds ground chuck
  • 1 small onion
  • 1 tablespoon fresh parsley
  • 1 cup Italian style bread crumbs
  • 4 large eggs
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons granulated garlic
  • 1 teaspoon dry mustard
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • cooking spray
  • glaze
  • 1/2 cup ketchup
  • 1 tablespoon molasses
  • 1 teaspoon tamari
  • 1 teaspoon sugar

Preparation

Step 1

Preheat oven 400 degrees
Remove ground beef from the refrigerator about 20 minutes before preparation. Finely chop onion and parsley. Combine the meat with all of the ingredients in a large mixing bowl and mix to combine with hands.
Spray two loaf pans with cooking spray and press half of the meatloaf in one pan and the remainder in the second pan.
To make the glaze: stir ketchup, molasses, sugar and tamari in a small bowl until combined and spread half over the first and remainder over the second loaf. Bake for 40 minutes. Rest meatloaf for 5 minutes. Slice and serve with mashed potatoes and vegetable.
This recipe can easily be cut in half but make 2 loaves if you like leftovers.
