Ingredients
- 1 (3 lb) pork loin
- 1/4 cup Dijon mustard
- 6 garlic coves, minced
- 12 Tbsp. minced fresh rosemary
- 3/4 tea. salt
- 1/2 tea. pepper
Preparation
Step 1
Score the surface of the pork, making diamond shapes 1/4" deep. In a small bowl, combine the mustard, garlic, rosemary, salt and pepper; rub over pork.
Coast a roasting pan and rack with cooking spray; place pork on rack in pan. Bake, uncovered, at 350 degrees for 1 to 1 1/4 hours or until thermometer reads 160 degrees. Let stand 10 minutes before slicing.
