EASY Basil Mashed Sweet Potatoes


This is a recipe for a single serving of mashed Sweet Potatoes with fresh Basil, cream cheese and milk. To make larger servings, simply double the recipe.

  • 1 1 1 Sweet Potato (in wrapper)
  • 4-5 4-5 4-5 leaves of fresh Basil (or more/less depending on your personal taste)
  • 2 2 2 T. Butter
  • 1/4 1/4 1/4 Cup Milk
  • 1 1 1 t. Cream Cheese
  • to to taste

Step 1

1. Cook Sweet Potato according to instructions on packaging (generally 7 minutes in the microwave).
2. Remove from microwave and slit packaging to allow to cool.
3. Chop the Basil leaves, set aside.
4. Remove skin from potato (or leave on if you prefer).
5. Mash potato.
6. Add butter, cream cheese, milk, Basil, and salt & pepper. Mix until well blended.

Serving Suggestion- Add some more fresh Basil for garnish.
