Ingredients
- Makes One Pumpkin Roll
- 3 eggs
- 2/3 cups pumpkin
- 1 cup sugar
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 3/4 cups flour
- FILLING
- 2 tablespoons of butter
- 8 oz Cream Cheese
- 3/4 tsp. vanilla
- 1 cup powder sugar

Preparation
Step 1
Mix: Pumpkin, eggs, sugar, baking soda, cinnamon and flour together.
Pour mixture into greased and waxed cookie sheet. Bake 375 for 15 mins.
On tea towel place 1/4 cup powder sugar spread powder sugar over towel; invert roll peel off wax paper roll while still warm; let sit till cool.
unroll and put filling in and take towel out and reroll and serve.
