Wild Rice Brat Casserole

Wild Rice Brat Casserole 0 Picture


  • 1 lb Wild Rice Brats (regular works too)
  • 2 cans wild rice
  • 1 large onion (chopped)
  • 1 Red Pepper (chopped)
  • 3/4 C Celery (chopped)
  • 2 cans whole mushrooms
  • 1 lb Bacon (cut up)
  • 16 oz Beef Broth
  • 1/2 C sliced almonds (toasted)



Step 1

Melt butter, add vegetables and cook until onions are translucent, set aside in a large bowl. Fry bacon until crispy, drain most of the grease. Add to vegetables, stir in wild rice, mushrooms and broth. Spray casserole dish with vegetable spray, place half of the rice mixture in the bowl, add wild rice brats, (make sure you pierce the brats with a fork) add the rest of the wild rice mixture and top with almonds. Bake at 350 for 45 minutes. If it looks dry add a little liquid.
