Ingredients

  • 2 1 1/2-pound Cornish hens
  • 1 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon poultry seasoning, if desired
  • 1 small onion, finely chopped (about 1/2 cup)
  • 1 green bell pepper, cored, seeded, and finely chopped
  • 3 tablespoons unsalted butter or margarine
  • 1 tablespoon hone

Step 1

1. Preheat the oven to 350 degrees Fahrenheit. Rinse the hens under cold water and pat them dry inside and out with paper towels. Mix the salt, pepper, and poultry, seasoning in a small bowl and sprinkle half the mixture inside the hens. Divide the chopped onions and green peppers between the cavities of the 2 hens. Rub the rest of the seasoning mixture into the skin.
2. Combine the butter and honey in a small saucepan over low heat. Stir until the butter is melted and the mixture is smooth. Roast the hens, basting occasionally with the honey mixture, until no trace of pink remains in the thickest part of the thigh and they are well browned, about 1 hour and 15 minutes. Remove and let stand 5 minutes before serving.
