- 1 9 OZ YELLOW CAKE MIX PLUS INGREDIENTS TO MAKE CAKE
- 1 8 OZ COOL WHIP
- 1 t GRATED LEMON PEEL
- 1 t GRATED ORANGE PEEL
- RED AND YEOOLW FOOD COLORING
- 2 MEDIUM LEMONS, SLICED AND HALVED
- 2 MEDIUM ORANGES, SLICED AND HALVED
- 2 BLUEBERRIES
- 1 LARGE STRAWBERRY

Step 1
PREPARE CAKE ACCORDING TO PACKAGE DIRECTIONS, USING A GREASED AND FLOURED 8" ROUND PAN. COOL CAKE FOR 10 MINUTES, THEN REMOVE FROM PAN TO WIRE RACK TO COOL COMPLETELY.
TRANSFER TO 12-14 INCH SERVING PLATTER.
COMBINE COOL WHIP AND LEMON AND ORANGE PEELS. FROST TOP AND SIDES OF CAKE. PLACE DROPS OF FOOD COLORING RANDOMLY OVER FROSTING. WITH A SPATULA, BLEND COLORS RAMDOMLY. ALTERNATE LEMON AND ORANGE SLICES AROUND THE BASE OF THE CAKE TO FORM SUNSHINE RAYS. ADD 2 ORANGE SLICES AND BLUEBERRIES FOR THE EYES. SLICE THE STRAWBERRY, USE 2 CENTER SLICES FOR THE MOUTH, PLACING THEM ON THE CAKE WITH STRAIGHT EDGES TOUCHING.
REFRIGERATE UNTIL SERVING.
