cookie - Oatmeal raisin quinoa breakfast cookies

Ingredients

  • 1 ripe banana, mashed
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup oats
  • 1/2 cup cooked quinoa
  • 1/4 cup raisins
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat oven to 350 degrees.

In a large bowl, mix together the banana, egg and vanilla.

Add the remaining ingredients and mix together.

Spoon the mixture onto a greased or silpat lined baking sheet in heaping spoonfuls.

Bake for 12-15 minutes.

Remove from oven and cool on a wire rack.
