Macaroon Sugar Cookies

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1/2 cup margarine, softened
  • 1/2 cup shortening
  • 1 tsp vanilla
  • 2 eggs, beaten
  • 3 cups all purpose flour
  • 1 cup instant mashed potato flakes
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups sweetened flaked coconut
  • Optional: 1/2 cup chopped walnuts
  • Garnish: additional sugar

Preparation

Step 1

Blend together sugars, margarine, shortening and vanilla. Beat in eggs, blending well. Gradually add flour, potato flakes, baking soda and salt; mix well. Stir in coconut and walnuts, if using. Form into one inch balls and place on ungreased baking sheets. flatten with the bottom of a glass that has been dipped in sugar. Bake at 375 degrees for 6 to 8 minutes. Cool slightly on baking sheets; remove to a wire rack to cool completely
