Herbed Roast Turkey with Caramelized Onion Gravy

Ingredients
- 1 turkey 12-14 lb thawed
- Vegetable Bread Stuffing
- 1/4 cup butter at room temperature
- 1 T plus 1 tsp dried herbes de provence
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 4 small onions cut into 1" thick slices
- 1 can 14 1/2 oz lower sodium chicken broth
- 1/2 cup white wine or chicken broth
- 1/4 cup all purpose flour

Step 1
preheat oven to 350. fill turkey cavity with some stuffing. transfer remaining stuffing to ungreased 1 qt baking dish cover and refrigerate. if desired trust turkey, place in large roasting pan. combine butter, 1 T herbes de Provence, 1/2 tsp sale and pepper, rub over turkey. place onions in pan around turkey.
Roast turkey until meat thermometer inserted into thickest part of thigh away from bone registered 180, about 3 hours tenting with foil if browning too quickly. place uncovered baking dish with stuffing in oven 30 minutes before turkey is done. transfer turkey to serving platter, let stand 20-30 minutes before carving.
meanwhile skim fat from pan juices, discarding all but 1/4 cup fat. add enough broth to juices to equal 3 1/2 cups, return with skimmed fat to roasting pan set over 2 burners on medium heat. whisk wine, flour nand remaining herbes de provence and 1 tsp salt whisk into juices. cook stirring until thickened 2-3 minutes serve with turkey and stuffing
