Garlic Skillet Rice

Ingredients

  • 3 1/3 cups water
  • 1 1/2 cups long-grain or whole-grain rice, uncooked
  • 2 tablespoons vegetable oil
  • 1/2 cup angle-cut scallions (2 scallions)
  • 2 cloves garlic, minced
  • 1 large, firm tomato, cut into cubes (about 1-1/2 cups)
  • 1 teaspoon salt
  • 1/2 teaspoon dried dillweed
  • 1/4 cup ranch salad dressing

Preparation

Step 1

In a large saucepan, bring the water to a boil. Add rice then reduce heat and simmer for 20 minutes, or until all the water is absorbed; set aside.

In a large skillet, heat oil over medium-high heat and saute scallions and garlic for 2 to 3 minutes. Add tomatoes and continue to saute for 2 to 3 more minutes.

Add cooked rice, salt, and dillweed; mix well. Add salad dressing and mix until heated through. Serve immediately.
Notes

If you want this a bit more creamy, add an additional 1/4 cup ranch dressing, you know, the secret ingredient. (Ssh!) And you can try any of the ranch dressing flavors like Caesar ranch, peppercorn ranch, or others -- they'll all work.
