Apple-Tequila Glazed Pork Roast

Pork and apples are perfect together: tequila, mustard and sage add depth to this beautiful meal that comes together while you and your friends are off at the orchard!
Ingredients
- 4 lb. pork loin roast, trimmed
- salt and pepper
- 6 Granny Smith Apples, cored and sliced
- 1/3 cup apple juice
- 3 Tbsp. Sauza Gold Tequila
- 3 Tbsp. brown sugar
- 2 Tbsp. dijon mustard
- 2 Tablespoons fresh sage, minced

Preparation
Step 1
Rub the pork roast generously with salt and pepper.
Brown the roast under your broiler and drain the fat off so that your final result is lean.
Place apple slices in bottom of 4-6 quart crock pot.
Place roast on top of apples.
Whisk together apple juice, Sauza Tequila, brown sugar, mustard and sage.
Spoon over top surface of roast.
Cover and cook on low for 10-12 hours, or on higher setting 6-8 hours, until internal temperature registers 155. Remove the roast and slice to serve. Spoon sauce over the meat and serve alongside a simple apple, Parmesan and arugula salad.
