Ingredients
- 2 cups milk
- 1/2 teaspoon cinnamon
- 1/8 teaspoon allspice
- 1/8 teaspoon ground cloves
- 1/8 teaspoon white pepper
- 3 eggs-lightly beaten
- 2 egg whites
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 2/3 can pumpkin
- 1/3 cup light brown sugar
Preparation
Step 1
Combine first five ingredients in a saucepan. Bring to a simmer; remove from heat. Cover and let stand 20 minutes.
In a small bowl, whisk together the lightly beaten eggs, egg whites, sugar and salt. Reheat the milk mix, then add the eggs to milk, stirring constantly for about 10 minutes, til spoon coats.
Remove from heat and add vanilla. Whisk pumpkin into the custard gently. Pour into 6- 8" ramekins. Place in a shallow pan of water and bake about 45 minutes in a preheated 350 degree oven, until set but wobbly. Cool and refrigerate.
Before serving, sieve the brown sugar over the tops.
Broil 6" from the heat for 2-3 minutes.
