Turkey with Cauliflower Carrot Herb Mash

Ingredients
- 4 cups cauliflower, washed and cut into florets
- 2 cups carrots, peeled and chopped
- 1 cup onion, chopped
- 2 cloves garlic, chopped
- 1 Tablespoon fresh rosemary, minced
- 1 Tablespoon fresh thyme, minced
- 2 Tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cups turkey, cooked and cut into thick slices (Thanksgiving leftovers work great)

Preparation
Step 1
In a large pot with a steamer basket, steam cauliflower and carrots until soft. In a large skillet, heat half of the olive oil over medium heat. Saute onions, garlic and herbs until onion is translucent. Season with salt and pepper. In a food processor, add steamed cauliflower and carrots. Add sauteed onion, garlic, herbs and remaining oil. Process until smooth. Season with more salt and pepper if needed. Serve over turkey.
Freezing Directions:

Process until smooth. Season with more salt and pepper if needed. Place in gallon freezer bag. Place turkey in quart freezer bag and place inside gallon bag. Label and freeze. To serve: Thaw both bags. Reheat in microwave or on stoveop. Serve cauliflower mash over turkey.
