Potato Snowflake donuts

Ingredients
- 2 c. sugar
- 4 t. baking powder
- 4 c. all-purpose flour
- 1-1/2 c. milk
- 1 c. hot mashed potatoes
- 2 T. butter
- Garnish: powdered sugar

Step 1
.Stir together sugar, baking powder and flour; add milk and blend in potatoes and butter. Mix thoroughly, then roll out on a well floured board until 1/2-inch thick. Cut with round biscuit cutter; set aside. Add enough oil to a deep fryer or heavy pot to equal 4 inches. Heat to medium-high. A candy thermometer should read 360 degrees when oil is hot enough. Add donuts, 2 or 3 at a time, turning over until all sides are golden. Drain well on paper towels. Roll in powdered sugar if desired. Makes about 2 dozen.
