Cinnamon Brunch Loaf

  • Topping:
  • 1/4 cup brown sugar
  • 1/4 cup chopped nuts
  • 2 Tablespoons softened butter
  • 1 teaspoon cinnamon
  • Bread:
  • Cooking Spray
  • 1/2 cup shortening
  • 3/4 cup sugar 1 teaspoon vanilla
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 2/3 Carnation evaporated milk
  • 1/3 cup water
  • 1 Tablespoon vinegar

Preparation

Step 1

Topping:Combine brown sugar, nuts, butter and cinnamon; set aside.

Spray a 9 x 5 loaf pan with Pam.

Cream shortening, sugar and vanilla in a large bowl. Add eggs, one at a time; beat well after each addition.

Next, sift flour, baking powder, soda and salt together.

Then combine evaporated milk and water; stir in vinegar.

Add flour mixture alternately with milk mixture into the creamed shortening mix.

Turn half the batter into the prepared pan. Top with brown sugar-nut mixture. Spread remaining batter on top.

Bake in a slow oven 325 degrees 45-50 minutes, until toothpick comes out clean. Enjoy!
