Ingredients

  • juice and zest of 2 limes plus 1 lime cut into wedges for serving

    cup coarse grain mustard

    14-16oz. tenderloins, trimmed and cut in half crosswise

    slices bacon chopped

  • 1

    small yellow onion, finely chopped

  • 1

    Tbs. Worcestershire sauce

  • pinch of ground nutmeg

  • 1

    whole star anise

  • pinch of crushed red pepper flakes

  • 1

    cup. strawberry sauce

Directions

preheat oven to 400 in a resealable plastic bag combine lime zest, juice, mustard, 1 Tbs. olive oil place tenderloin in bag, turn to coat, refrigerate 1 hr. in med. heavy saucepan, cook bacon over med. until crisp, about 5 min. reduce heat to low add onion and garlic, cook 1 min. add worcestershire sauce, nutmeg, anise, red pepper, and strawberry sauce, simmer until thickened strain sauce, keep warm heat remaining Tbs. olive oil in large ovenproof skillet over med-high heat until oil ripples remove meat from marinade and sear on all sides 10-12 min. total place skillet in oven to roast until cooked through, but still juicy about 10 min. for medium tent on cutting board for 10 min. slice and serve with sauce and lime wedges
