- 6 c. watermelon rind, diced
- 4 1/2 c. sugar (approximate)
- 1 lemon, thinlly sliced and seeded
- 1 tsp Allspice (optional)

Step 1
Once you have served your watermelon, save the rinds in the frig until you are ready to prepare the preserves.
Peel the green outer skin off the melon, leave a little of the red pulp on the rind. Slice the rind into narrow, 1/4 inch wide slices, then slice those into 1/4 inch cubes. Place rind in a large pot and cover with all of the sugar. Cover until the fruit doesn't show. Cover with plastic wrap. Put it in the frig overnight; this draws the juices out of the rind.
Place pot on stove and add lemon slices and allspice, if desired. Boil mixture slowly until rind is clear, about 2 hours. Place in sterile jars and seal tightly. Serve on buttered toast.
