Lentil Soup (diab)

Ingredients

  • 2 cloves garlic, minced
  • 1 1/3 cups finely chopped onion
  • 1 cup chopped red or green bell pepper
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup dried brown lentils, rinsed, drained
  • 1 teaspoon dried oregano
  • 6 cups water

What To Do:
Coat a large nonstick skillet with cooking spray. Over medium heat, cook garlic, onion, bell pepper, celery, and carrots until tender, about 6 to 8 minutes, stirring occasionally.

In a soup pot, combine vegetable mixture with lentils, oregano, and water. Bring to a boil. Reduce heat to medium-low, cover, and simmer 50 to 60 minutes, or until lentils are tender, stirring occasionally.
