Pecan Pie Muffins

Ingredients
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 2 eggs, beaten
- 1/2 teaspoon vanilla
- 1/8 teaspoon salt
- 1/2 cup all-purpose flour
- 3/4 cup chopped pecans
Preparation
Step 1
Preheat oven to 350 degrees and line 8 muffin cups with paper liners. In a medium bowl, add the softened butter and brown sugar and beat on medium speed until light and fluffy. Add beaten eggs, vanilla, and salt and mix until combined. Slowly mix in flour until combined. Stir in chopped pecans. Spoon batter into 8 lined muffin cups about 2/3 full. Bake muffins at 350 degrees for about 25 minutes. Let cool 5 minutes in muffin pan and serve warm.
