Ingredients
- 1 batch chinese pizza dough
- 1 oz dried mushrooms
- 1 small zucchini
- 1 small onion
- 1/2 red bell pepper
- large handful fresh basil leaves
- 2 tbsp canned unsweetened coconut milk
- 4 tsp sugar
- 1/2 tsp ground ginger
- 2 tsp soy sauce
- 1 tbsp peanut oil
Preparation
Step 1
Preheat oven to 500F
Soak mushrooms in warm water until softened (about 15 minutes). Drain and squeeze them to remove as much moisture as possible. Cut into bite-sized pieces. Chop the zucchini into thin rounds and cut the rounds in half. Coarsley chop the onion and dice the red bell pepper.
Wash and chop (or chop with scissors)basil leaves. Mix the mushrooms, vegetables and basil in a bowl.
In a separate bowl, combine coconut milk and sugar (omit the sugar if using sweetened coconut milk), ginger and soy sauce and mix thoroughly. Stir into the vegetable mixture.
Spread the mixture onto the pizza dough and sprinkle with the peanut oil. Bake for 10 minutes.
