Penne w/ Spinach, Artichokes and Cherry Tomatoes

Ingredients

  • 1 pound Whole wheat penne
  • 1/8 cup Extra virgin olive oil
  • For the Vegetables
  • 2 tbs Extra virgin olive oil
  • 16 ounces Fresh spinach, washed and stem ends removed
  • 1 pint Cherry tomatoes, washed and halved
  • 8 ounces Artichoke hearts
  • 1/2 cup Crumbled feta cheese
  • 1/4 cup Fresh basil, chopped

Preparation

Step 1

Cook pasta as directed on box, without salt and oil.
Drain pasta and toss with 1/8 cup of olive oil.
Cover to keep warm.
Place remaining 2 tbs of olive oil in skillet to coat and heat on high until oil is hot and fragrant.
Cook spinach in skillet until tender - 1 to 2 minutes.
Mix in cherry tomatoes and artichoke hearts.
Heat for 2 to 3 minutes.
Remove from heat and toss with warm pasta, feta cheese and fresh basil.
Serve immediately.
