Easy Haddock Recipe

  • 1/2 cup olive oil
  • 1/2 stick butter or margarine
  • 1 tbsp crushed garlic
  • 1/2 cup chopped onion
  • 1 packaged sliced mushrooms
  • 1 cup white wine
  • 1/4 cup fresh chopped parsley
  • salt and pepper
  • 1 can diced tomatoes (14.5 ounce) I prefer the tomato basic and oregano flavor
  • 1.5 lbs haddock (may substitute with cod)

Instructions

Add the olive oil, butter and garlic to the saucepan and cook on low for about 5 minutes then add the onions and and saute on low/medium heat for about 10 minutes.

Next add sliced black olives and white wine

Add diced tomatoes and bring to a boil.

Once the sauce comes to a boil, add the haddock. You can substitute with cod as well.

Sprinkle with salt, pepper and parsley. Cover and let boil for 3-5 minutes then simmer for 15 minutes or until fish is cooked. Fish will be done when it breaks off with a fork and is flakey. You will notice the fish start to break apart as it cooks.
