Salmon Fillets with Black Bean and Red Pepper Puree

a delicious combination, it's also great with chicken also.
Serve with white rice.

Ingredients

  • Beans
  • 1 15 oz. can black beans, drained and rinsed
  • 1 cup chicken or vegetable stock
  • 1/2 cup minced onion
  • 1 large clove garlic, pressed
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • Red Pepper Puree
  • 1 roasted red pepper,peeled, seeded and cut into pieces
  • or 3/4 cup roasted red peppers from a jar
  • 2 T. olive oil
  • 1/2 teaspoon kosher salt
  • 4 Salmon fillets, 4-6 oz. each
  • vegetable oil
  • sweet paprika to taste, I use smoked paprika
  • White pepper to taste
  • 1/2 cup sour cream
  • Fresh cilantro leaves and lime wedges
  • Basil leaves can be used if you do not like cilantro

Step 1

1. Combine the bean ingredients in a small saucepan, bring to a boil, reduce heat to med. low and simmer covered, for 30 min, stirring occasionally. Allow to cool. Puree half the bean mixture in a blender or food processor, return to the pan with remaining beans and mix well. Adjust seasonings to your taste. If mixture becomes too thick, thin with a little stock. It should be thin enough to spoon onto a plate, but not runny.

2. To make red pepper puree, place peppers, olive oil and salt in blender, process until smooth. Transfer to bowl and set aside. Can make ahead.

3. Rinse Salmon, pat dry then rub with vegetable oil and season with paprika and white pepper. Heat pan, when hot add salmon and cook 4- 6 minutes on med heat, turn and cook 2-4 min longer. Rule of thumb. 10 min. per inch.

4. To serve, divide black bean puree onto plates, place salmon on top and drizzle with red pepper sauce. Place a
dollop of sour cream on top and sprinkle with cilantro and squeeze a wedge of lime over each serving. Garnish with additional lime.
